Vegetable Confits

Confits are foods that are cooked slowly over a long period of time at lower temperatures (generally below 100C) as a method of preservation. My vegetable confits are cooked in extra virgin olive oil. The various vegetable confits are offered in a jars.

Butternut Confit

Butternut Confit is made with butternut, extra virgin olive oil, garlic cloves, sage, macadamia nuts, fresh chives and crumbled goat cheese.

Not a traditional charcuterie side, but this is a product that can be easily heated as a side dish as is, or can be used for something more adventurous like a base for your ravioli pasta filling

The butternut confit is available in 120 and 185g jars.

Cherry Tomato Confit

The Cheery Tomato confit is a traditional oven confit and is made with cherry tomato, garlic, thyme, salt & pepper in extra virgin olive oil.

This confit lens itself well on salads, as a pasta sauce, on your grilled meats, or any other dish where you want a deep cheery tomato flavour with a hint of garlic and thyme. The leftover is great when used in a vinaigrette

The fennel confit is available in a 120g jar.

Fennel Confit

Fennel confit is made with fennel, extra virgin olive oil, bay leaf, salt, pepper corns and orange zest.

The fennel confit is gentle in taste with a hint of orange, still has structure, is perfect as condiment of meat and cheese platters, as a side or accompaniment to fish dishes.

Fennel confit is available in a 180 g and 320g jar.

Garlic Confit

Garlic Confit is made with garlic, extra virgin olive oil, bay leaves salt and pepper corns

The garlic confit is soft and delicious, can be spread on toast or grilled bread, eaten straight from the jar, is great with charcuterie boards and fish dishes. Garlic confit can be used as a garnish with stews, braises, topping on pizza's.

As the olive oil takes over some of the soft garlic taste, once you finish all the garlic confit in the jar, the remaining oil becomes a delicious finishing oil and can be used directly on salads or in vinaigrettes.

Garlic confit is avaiable in a 145g jar.

Onion Confit

Onion confit is made with onion, extra virgin olive oil, garlic, salt and pepper.

The onion confit into thick inviting slices and is well suited for salads and sandwiched, and absolutely perfect for toasted ham & cheese sandwiches. You can also warm the onion confit up to garnish omelets, fish and steak dishes or platters.
