Meat Confits

Confits are foods that are cooked slowly over a long period of time at lower temperatures (generally below 100C) as a method of preservation. My meat confits are cooked in duck fat. Meat confits are sold in vacuum packed pouches, or if ordered in larger quantities can also be sold in a ceramic confit dish, will be charged an additional R100 for the dish, but will be refunded upon return.

Confit Meats can only be made to order. Orders close on Monday at 6pm for Friday delivery or collection at my kitchen.

Chicken Confit

Chicken Confits are marinated and then slow cooked sous vide in duck fat. A portion consists of 2 drumsticks and 2 thighs.

Chicken Confit is made with bay leaves, black pepper, cloves, juniper berries, thyme, garlic and salt.

Depending on quantities ordered these will be offered in vacuum sealed packs or for larger quantities in a traditional large ceramic confit dish.

Duck Confit

Duck Confits are marinated and then slow cooked sous vide in duck fat, I offer it in 2 types of duck parts or cuts; 2 legs or 2 breasts per portion and I can offer 3 taste options:

  • Traditional Duck Confit made with garlic, thyme, salt and pepper

  • Western European Duck Confit made with garlic, allspice, cinnamon, salt and pepper

  • Asian-style Duck Confit made with garlic, soy sauce, spring onions, ginger and five-spices.

Depending on quantities ordered these will be offered in vacuum sealed packs or for larger quantities in a traditional large ceramic confit dish.
